Disclaimer

Your kitchen is not our kitchen

If a batch comes out paler, softer or slower than the recipe promised, look first at your own setup. Flour, oil, the strength of your burner, your oven's real temperature, the altitude where you live and how often you have made the dish all change the outcome. Treat the times and quantities here as a carefully tested place to start, not a guarantee.

Safe handling is up to the cook

Where a recipe uses raw meat, poultry, eggs, dairy or hot oil, it includes safety notes such as internal temperatures and how long leftovers keep. We offer those in good faith, but the person at the stove is the one who has to act on them: check that ingredients are fresh, cook meat and poultry through to a safe temperature, and throw out anything you suspect has turned.

Nothing here encourages unsafe habits with frying oil. That includes heating it again and again beyond its smoke point, topping up old oil with new indefinitely, or keeping used oil in a way that lets it go bad.

Not a substitute for professional advice

The site offers no medical, dietary or nutritional guidance. It does not list calorie counts, and it does not say that any ingredient treats, prevents or cures an illness. If you live with an allergy, an intolerance or a condition shaped by what you eat, speak with a qualified professional and read every ingredient label before you cook or serve a dish.

Origins and history

Stories about where a dish began are researched with care, yet food history is often handed down by word of mouth and can be incomplete or argued over. When a point is unsettled, the page says so instead of presenting it as fact.
